Farmhouse-Style Stir-Fried Pork

  • 五花肉 Pork belly (thinly sliced) — 100 g

  • 梅花肉 Pork shoulder / pork collar (sliced) — 200 g

  • 青椒 Green chili pepper (cut diagonally) — 300 g

    红椒 Red chili / red bell pepper (cut diagonally) — 1 pc

  • 大蒜 Garlic cloves (sliced lengthwise) — 50 g

  • 黑豆豉 Fermented black beans (chopped) — 8 g

  • 蒜粒 Garlic (minced) — 5 cloves

  • 姜 Ginger (sliced) — 3 slices


梅花肉腌料 Marinade (for pork shoulder)

  • 盐 Salt — 1 g

  • 生抽 Light soy sauce — 2 tsp

  • 老抽 Dark soy sauce — 1 tsp

调味料 Seasoning

  • 生抽 Light soy sauce — 1 tbsp

  • 老抽 Dark soy sauce — 1 tsp

  • 鸡粉 Chicken stock powder — 1/2 tsp



2️⃣ 川版鱼香肉丝(调整版)

Sichuan-Style Fish-Fragrant Shredded Pork

食材 Ingredients

  • 瘦猪肉 Lean pork (shredded) — 250 g

  • 大葱 Scallion / Chinese leek (cut into segments) — 100 g

  • 姜 Ginger (minced) — 10 g

  • 蒜 Garlic (minced) — 10 g

  • 泡椒 Pickled chili pepper (minced) — 2 tsp

腌料 Marinade

  • 盐 Salt — 1/4 tsp

  • 鸡粉 Chicken stock powder — 1/4 tsp

  • 老抽 Dark soy sauce — 1 tsp

  • 清水 Water — 2 tbsp


  • 红薯淀粉 Sweet potato starch — 1 tbsp

  • 食用油 Cooking oil — 1 tbsp


调味料 Sauce

  • 清水 Water — 2 tbsp


  • 鸡粉 Chicken stock powder — 1 tsp

  • 白糖 Sugar — 2 tbsp

  • 米醋 Chinese rice vinegar — 2 tbsp

  • 生抽 Light soy sauce — 2 tsp

  • 老抽 Dark soy sauce — 1 tsp

3️⃣ 川版宫保鸡丁

Sichuan-Style Kung Pao Chicken

食材 Ingredients

  • 去骨鸡腿肉 Boneless chicken thigh (diced) — 300 g

  • 干辣椒 Dried red chili — 10–12 pcs

  • 炸花生 Roasted peanuts — 50 g

  • 小葱 Spring onion (cut into segments) — 1 stalk

  • 姜 Ginger (sliced) — 1 slice

  • 蒜 Garlic (sliced) — 2 cloves

  • 食用油 Cooking oil — as needed


鸡肉腌料 Marinade

  • 盐 Salt — 1/4 tsp

  • 胡椒粉 Pepper — 1/4 tsp

  • 生抽 Light soy sauce — 1 tsp

Cumin Lamb Stir-Fry

  • 羊腿肉 Lamb leg (sliced) — 300 g

  • 洋葱 Onion (sliced) — 1/4 pc

  • 青椒 Green bell pepper (sliced) — 1 pc

  • 红椒 Red bell pepper (sliced) — 1 pc

  • 香菜 Fresh coriander — 1 bunch

  • 食用油 Cooking oil — as needed


腌料 Marinade

  • 生抽 Light soy sauce — 1 tbsp

  • 料酒 Cooking wine — 1 tbsp

  • 盐 Salt — to taste

Hunan-Style Boiled Beef (Chopped Chili Version)

  • 剁椒 Chopped chili (Hunan-style) — 3 tbsp

  • 红甜椒 Red bell pepper (minced) — 1 pc

  • 蒜 Garlic cloves (crushed) — 5 cloves

  • 牛肉高汤 Beef stock — 300 ml

  • 食用油 Cooking oil — as needed
