1. 凉拌海带丝 Cold Tossed Kelp Strips
材料 Ingredients:
干海带丝 Dried kelp strips – 50g

小米辣 Fresh chili (small, spicy) – 1–2 pcs, sliced

熟白芝麻 Roasted white sesame – 1 tsp

食用油 Cooking oil – 2 tbsp (approx. 30ml, for frying chili and garlic)

🌶 调味料 Seasonings:
大蒜 Garlic – 4–5 cloves (about 20g), minced finely

生抽 Light soy sauce – 2 tbsp

米醋 Rice vinegar – 3 tbsp

白糖 Sugar – 1 tsp

芝麻香油 Sesame oil – 1 tsp

盐 Salt – ½ tsp

鸡粉 Chicken Powder – ¼ tsp

2. 小鸡炖蘑菇 Braised Chicken with Mushrooms
材料 Ingredients:
鸡大腿 Chicken thighs – 800g–1kg

干香菇 Dried shiitake mushrooms – 15–20 pcs (approx. 30g)

葱 Spring onion – 2 stalks (1 for stir-fry, 1 sliced for garnish)

姜 Ginger – 3–4 slices (15g)

大蒜 Garlic – 3 cloves, smashed

调味料 Seasonings:
食用油 Cooking oil – 2 tbsp

生抽 Light soy sauce – 3 tbsp

老抽 Dark soy sauce – 1 tbsp

料酒 Chinese cooking wine – 2 tbsp

白糖 Sugar – 1 tsp

八角 Star anise – 1 piece

盐 Salt – about 1 tsp (adjust to taste)

热水 Hot water – approx. 600ml (important to use hot water)
3. 油焖大虾 Oil-Braised Tiger Prawns
材料 Ingredients:
大虾 Large prawns – 12–15 pcs (about 400g)

葱 Spring onion – 1 stalk (white part cut into segments, green part chopped)

姜 Ginger – 3 slices, cut into thin strips

大蒜 Garlic – 2 cloves, minced

调味料 Seasonings:
食用油 Cooking oil – 3 tbsp

生抽 Light soy sauce – 2 tbsp

料酒 Chinese cooking wine – 1 tbsp

白糖 Sugar – 1.5 tbsp

香醋 Black vinegar – ½ tsp

盐 Salt – a pinch (about ¼ tsp, adjust taste)

热水 Hot water – 3 tbsp
4. 地三鲜 Stir-Fried Eggplant, Potato and Green Pepper
材料 Ingredients:
茄子 Eggplant – 1 pc (approx. 300g), peeled and cut into chunks

土豆 Potato – 1 large (approx. 250g), peeled and chunked

青椒 Green bell pepper – 1 pc (approx. 150g), de-seeded and chopped

大蒜 Garlic – 3 cloves, minced (divided into 2 uses)

葱白 White spring onion – 5cm section, minced

调味汁 Sauce Mix:
Mix the following in a bowl:
生抽 Light soy sauce – 2 tbsp (30ml)

老抽 Dark soy sauce – ½ tbsp (7ml)

白糖 Sugar – 1 tbsp (15g)

香醋 Black vinegar – 1 tsp (5ml)

盐 Salt – ¼ tsp (1.5g)

淀粉 Cornstarch – 1 tsp (5g, for thickening)

清水 Water – 5 tbsp (75ml)
5. 白菜豆腐汤 Napa Cabbage Tofu Soup
材料 Ingredients:
大白菜 Napa cabbage – 300g (approx. half a head), stems sliced, leaves torn

老豆腐 Firm tofu – 350g, cut into 1.5cm thick slices

虾皮 Dried shrimp – 1 tbsp (5g), or substitute with dried scallop shreds

葱花 Chopped spring onion – 2 tbsp

姜丝 Shredded ginger – 2 slices

调味料 Seasonings:
食用油 Cooking oil – 1 tbsp

盐 Salt – 1 tsp

白胡椒粉 White pepper – ½ tsp

香油 Sesame oil – a few drops (optional)

开水 Hot water – 800ml
6. 五蔬炒饭 Five-Veggie Fried Rice
材料 Ingredients:
隔夜米饭 Overnight rice – 2 bowls (approx. 400g), loosened

鸡蛋 Eggs – 2, beaten with a pinch of salt

混合蔬菜丁 Mixed veggie cubes – 1 cup (150g) (carrot, peas, corn, green beans)

泡发香菇丁 Diced rehydrated shiitake – 5 pcs


小葱末 Chopped spring onion – 2 tbsp (use in two steps)

蒜末 Minced garlic – 1 tsp

调味料 Seasonings:
食用油 Cooking oil – 2 tbsp (split into 2 uses)

生抽 Light soy sauce – 1 tbsp

蚝油 Oyster sauce – 1 tbsp

盐 Salt – ¼ tsp (1.5g)

白胡椒粉 White pepper – ½ tsp
